初见档主谢老板,会觉得他从言行举止到衣着打扮都很有江湖味。与他聊开后,会发现他“江湖”得来又很“接地气”。来自吉胆岛的他侃侃而谈起经营烧鱼档口的点滴。每天早上,他都会亲自向他的海鲜供应商挑选他当天的货源。因此出现在他档口里的鱼都是经过他严格挑选之后的“佼佼者”。他坚信有他亲自严格把关,才可以确保顾客们吃到最新鲜,最美味的烧鱼。谢老板也解释,魔鬼鱼不同部位的肉会有不同纹路。若你不常吃烧鱼,他还会挑选直纹路的鱼肉片,因为直纹路肉片较容易用筷子夹起并撕开,以不至于鱼肉被夹至“支离破碎”。接着,他表演了熟练的刀工,在不到两分钟时间内,将半只魔鬼鱼切成一块块大小一致的鱼肉片。在烧鱼的过程中,他热情地解释每个步骤。下鱼、翻鱼、淋酱,他都一一解释,挺有烹饪节目主持人的风范。

谢老板烧鱼的特别之处,在于他自家调配,三种风味各不同的酱汁。酸辣的东炎酱和辣中带甜的叁巴酱各被淋在一半的魔鬼鱼肉片。加上另外送上的一小碟非常开胃的酸甜沾酱,一碟烧鱼可吃出三种风味。除了烧鱼,顾客们还可以选择贝壳类如啦啦、鲜蛤、和马里咚,非常适合当主餐外的小食。

谢老板与熟客们交情都挺深。他还强调,许多顾客们来到档口时,只会说明要吃什么鱼,无需亲自挑选档口上的鲜鱼肉,因为顾客们知道,出现在他档口的鱼肉,必属佳品!

Chong’s Pulau Ketam grilled fish is a hugely popular stall within Kampung Food Court. The owner adheres to a strict quality when it comes to selecting his seafood. He personally selects his fresh seafood from his suppliers every day, choosing only the best ones. This is to ensure his customers the best grilled fish and seafood. Also popularly known as “ikan bakar”, his signature food, the grilled stingray, is served with three distinctly flavoured sauces, namely the tom yam sauce, sambal sauce, and sweet & sour sauce.
