面粉粿是不是板面?这问题从不同人的口中会得出不同的答案。当中大家普遍认为“面粉粿”是福建人的叫法,而“板面”则是广东人的叫法。但寻根究底,两者终究是“一家人”,只是形状不同而已。将面粉撕成一片片形状不一的扁块状,眼看像“粿”多于“面”,所以叫面粉粿。

从店内墙上一排排媒体采访的照片和剪报,可看出大肥面粉粿是百家利一家闻名悠久的老招牌。络绎不绝的顾客和店家助手们不曾停歇的撕面动作,似乎成了这家店的固定景观。不停歇地撕面,因为店家坚持以人手撕面,一碗一碗地烹煮面粉粿。手工制作的面粉粿,口感富有嚼劲。习惯吃面状的食客也可选择“QQ香滑面”,口感正“面”如其名般顺滑。此外,香脆的炸江鱼仔,炸洋葱,青菜和鸡蛋也为一碗面粉粿增添不少风味。但一碗面粉粿的精髓,往往在于其汤汁。店家透露说他们的汤汁采用100%江鱼仔经过4小时的熬煮,绝对真材实料,绝不偷工减料。喝了一口清甜的汤,听着这似乎简单的道理,再看着店内源源不绝的人潮,才发现捉着食客们味蕾的秘诀,无需过多的花俏,而是做好最基本的功夫。

这也难怪当被问到为什么他们多年来不曾研发干捞或其它口味的面粉粿,只单靠一种最传统的汤式面粉粿打天下时,热情的店家两姐弟说太多的口味他们担心做不好也做不来,所以专心做好本分,“好吃的东西一种就够了”。

Fatty Mee Hoon Kuih House, serving the delicacy known by some as “Pan Mee”, is a hugely popular eatery in Berkeley. Usually crowded during lunch and dinner time, the waiting period could be up to an hour, but it’s certainly worth the wait! Served with fried anchovies, onions, vegetables and egg, it’s richly flavoured soup (boiled with 100% anchovies for up to 4 hours) adds a fine touch to the dish. Also, a noodle-shaped option is available in place of the flat-shaped Mee Hoon Kuih as well.
