作为肉骨茶起源地的巴生,坐拥无数间大大小小的肉骨茶档。如何在众多选择当中鹤立鸡群,成为老招牌之一,当中必有其道。开业于2009年的亚火三美肉骨茶,坐落在百家利Lebuh Lang一排单层旧店屋的角头间,店面简单无太多装饰,但这看似不起眼的肉骨茶店,却店如其名般“火”了起来,在巴生肉骨茶版图中插了属于自己的旗子,成为本地和外地人家喻户晓的肉骨茶招牌!

当中的奥秘,在于一股对猪肉品质的坚持。老板亚火透露,为了让顾客们吃到最新鲜美味的肉骨茶,他们坚持采用本地猪肉,并且由供应商每天运送而至,绝不隔夜,以确保猪肉新鲜不变质。他说,虽然进口猪肉价格较本地猪肉便宜,但运输过程较久,且若保存过程处理不妥当,猪肉容易变质。于是他不惜高成本仍坚持采用最高品质的本地新鲜猪肉,以让顾客们吃得美味,也吃得安心。亚火就是秉持着这一股“顾客是老板”的经营模式,建立了口碑,树立了品牌。“如今肉骨茶选择多得是,唯有重视品质,做好本分,才能让顾客一再光顾。”此话道出他对自己品牌素质的严苛要求。

亚火三美肉骨茶的菜单上除了大骨、小骨、脚弯、五花肉等多种不同的猪肉部位以外,还有粉肠、鸡脚、香菇等选择。碗装肉骨茶内的汤汁份量不多但浓郁入味。健谈的亚火还分享了一段他经营肉骨茶生意多年以来的有趣经验:原来福建人口中的“五花肉”和广东人口中的“花肉”指的是完全不同的猪肉部位!“花肉”其实是一些广东人对三层肉的俗称。所以为了避免“货不对办”,食客们点餐时可要注意一下哦!

Ah Her & Samy Bak Kut Teh is well known for their traditional Bak Kut Teh in bowls. The amount of of soup in the bowls are lesser compared to its claypot counterpart but its concentrated flavour made up for it. They ensure quality and freshness by insisting to have local pork instead of imported ones for their Bak Kut Teh. In addition to the various cuts of pork, they also serve intestines, chicken feet, and mushrooms among other side dishes.
